Domestic Goddess: Nutella Covered Chocolate Cupcakes

Since moving to university, I have neglected one of my favourite hobbies – baking!

I won’t bore you with the ins and outs of why I stopped baking (*cough* skint student *cough*), I’ll just jump right into my lovely recipe for these buns!!

So I must warn you, I rarely ever stick exactly to a recipe, I merely use it as inspiration, so I’m asking you to do the same… Basically, this is not an exact science and could end horribly! Just go with what feels and looks right!

Ingredients you will need:
2 eggs
Unsalted butter (such as Stork)
Self raising flour
Castor sugar (however, I have found granulated works just as well)
Bar of sort of nutty tasting chocolate, such as Milka
Nutella (optional but oh so tasty!)

I start off by weighing my eggs, as whatever they weigh, that is what the rest of your ingredients need to weigh also. For example, if they weigh 125g, then so will the butter, sugar and flour.

Once you know these measurements, then we can get started!

1. Cream together butter and sugar until light and creamy.
2. Add an egg and half the sieved flour and mix until well combined, repeat until all used up. (I like to lightly whisk eggs before adding)
3. Melt chocolate in a bowl over a pan full of water on the stove or in the microwave. It it usually best to melt some butter in the bowl before hand as I find it prevents the chocolate burning, but I prefer not to. How much chocolate you use depends on how chocolate-y you want them. I usually use the whole bar.
4. Combine melted chocolate into the mixture and place in bun cases.
5. Bake in the oven for 12-15 minutes at 190C, until once tapped, they sound hollow.
6. Leave to cool. Or if you’re like me and can’t wait to eat them, just skip to the next step.
7. Spread as much (or as little) Nutella as you like on the top of the buns with a knife.

And there you go, lovely chocolate-y cupcakes that won’t last 5 minutes they’re that yummy! I also usually like to decorate with a chocolate button!

One word of warning though, don’t use coco powder in this recipe, I tried it in my last batch and it made the outside too crunchy, and by the next day they were dry 🙁
